INGREDIENTS for 4 portions:

  • 500g spinach
  • 250g curd cheese
  • some onion
  • 1 pinch of salt

 

INGREDIENTS for the filling:

  • 500g spinach
  • 250g curd cheese
  • some onion
  • 1 pinch of salt

PREPARATION:

Mix the flour with salt, egg and a little water to a smooth dough and let it rest for a short time. Strain the spinach and let it drain well. Mix it with curd, spices and very finely chopped onion.

Then sprout the dough thinly and cut out round circles with a glass. Place the filling on top with a small spoon, fold the dough into a crescent shape and press the edges well together.

Put the Schlutzkrapfen in salted water and simmer for about 5 minutes with a dash of oil. Strain, sprinkle with parmesan and pour melted butter over them.
