Carnival doughnuts


We in Tyrol combine the carnival season with the sweet delicacy: Faschingskrapfen!
That's why we now have a recipe for tasting the traditional sweet dishes ourselves:


½ kg plain wheat flour
¼ L Milk
40 g Germ
40 g sugar
40 g butter
4 egg yolks
A little bit of salt

Rapeseed oil for baking
Apricot jam for filling
Icing sugar for sprinkling


First of all, you must warm the milk until it is lukewarm. In the meantime, heat the butter and add it to the milk with the yolk and the remaining sugar and mix well.

Mix the flour with the salt and add the milk mixture. The dough is now kneaded with dough hooks until it is smooth and separates from the bowl rim. This is now left to rise for about 1/2 hour until it is twice as big. Then knead together and repeat the process.

The dough is now cut into small pieces and formed into balls. Cover the balls and let them rise for some time.

Heat the oil to 150° and bake the carnival doughnuts in it for 3 to 4 minutes on one side until they are golden brown. This is also repeated on the other side. The doughnuts are drained on a kitchen roll and cooled down.

Now they only need to be filled with a piping bag and the desired filling (apricot jam). The white ring is created as the doughnuts continue to rise in the hot fat.
