Sweet tradition from Tyrol


For the perfect Kaiserschmarrn you need:

  • 200 g flour
  • 30 g sugar
  • 1 pinch of salt
  • 4  eggs
  • 300 ml milk
  • 40g butter
  • 30 g raisins (if you want some)
  • 1 pinch of powdered sugar to sprinkle

The ingredients correspond to 3 portions.

For the preparation first of all put the the flour, sugar, salt, yolk, raisins and the milk together in a bowl and mix it to a smooth, viscous pastry. As a next step beat the egg whites into a stiff snow and lift them under the thick dough.

Melt the butter in a pan, pour in the dough slowly and bake it on both sides until golden brown. Afterwards, take two forks and tear the Kaiserschmarrn into small and irregular pieces and arrange it on the plates. As a topping you sprinkle the Schmarrn with powered sugar and served it according to taste with applesauce or compote.
