Pumpkin time is back!

Delicious cream of pumpkin soup to recook


We love the autumn not only for the beautiful nature scenery of the trees, but also for the typical autumn dishes. When the temperatures fall, it is high time for warming dishes. The pumpkin is particularly popular and is an important part of this season. For this reason, we have selected a delicious dish made out of pumpkin for you to cook at home. 

The Pumpkin

The pumpkin has already entered in the menu for a very long time and was originally counted as a poor-people-meal. Meanwhile, the autumn vegetables are also indispensable in the upscale kitchen and convinces with its variety. Whether cooked, raw, warm, cold, sweet or piquant - the pumpkin tastes great in all possible versatility. Another big advantage is that the pumpkin is extremely healthy, low in calories and is rich in vitamins.

Pumpkin cream soup

Particularly popular is the pumpkin soup soup, because it is very easy and fast to prepare and can convince with the aromatic taste. Especially after a fresh autumn walk, you are looking forward to a warming soup and that is why we have chosen a recipe for you to convince yourself of this delicious dish.

And this is how it works:

  • 400 g of pumpkin (e.g., Hokaido, without cores)
  • 3 tbsp butter
  • 4 tablespoons sugar (brown)
  • 125 ml of soup
  • 125 ml cream 
  • Salt, pepper (fresh from the mill)
  • Pumpkin seeds, possibly pumpkin seed oil

As a first step you split the pumpkin, gutted it and then cut it into cubes of the same size. Then heat the butter in a pan and roast the pumpkin cubes. For a particularly aromatic taste, sprinkle the pumpkin with sugar and caramelize it.

As the next step you have to deglaze the pumpkin with soup and let it cook until the pumpkin is soft-boiled. Then add the cream and season with salt and pepper. Mix the whole thing thoroughly with a bar mixer until a creamy soup is produced. Finally, put the soup in small bowls and garnish with pumpkin seeds, pumpkin seed oil and herbs.
