Mix the egg whites with a pinch of salt until foamy and gradually add the lemon juice and icing sugar. Add 5-7 tablespoons of the mixture to the side so that you can brush the biscuits with it afterwards.
Mix the rest of the mixture with the ground almonds, cinnamon and vanilla sugar and mix to a dough. The dough can be processed immediately or left to cool for half an hour.
Preheat the oven to 170ºC hot air. Sprinkle the working surface with icing sugar or roll out the dough between 2 cling film sheets (1-2 cm). Cut out the stars and place them on a baking tray lined with baking paper. Brush the biscuits with the glaze to the side and bake for 15 min at 170°C.
